Why Baking Sheets Warp in the Oven, and How to Stop It
Uneven heat makes one part of the metal expand faster than the rest. Sudden temperature swings, oven hot spots and food piled on one side do it, and thin pans with plain rims give in first.

This page reads what 2 bakeware makers, Nordic Ware and USA Pan, publish about warping and care, and lists the pans owners say stay flat, chosen as How we choose describes. Nothing here was handled or tested.

A sheet warps when one part expands faster than the rest
Metal grows as it heats. When the whole sheet heats evenly, it grows evenly and stays flat. Nordic Ware’s explanation is that a pan which heats or cools suddenly, or unevenly, expands in one area faster than another, and the stress bends it. Thin pans give in first, which is why Nordic Ware tells buyers to look for a reinforced rim and an oven rating of 450°F or more.
Cold water on a hot pan is the fastest way to warp one
The most common cause in Nordic Ware’s guidance is a fast swing in temperature. Let a pan reach room temperature before it goes in the oven, and let it cool completely before it is rinsed in cold water. Avoid moving a pan straight from a 400°F oven into a 40°F fridge. Slow heating and cooling lets the whole sheet expand and contract together.
Rotate the pan halfway to beat an oven’s hot spots
An oven’s hot spot makes one part of the sheet expand faster than the rest. Nordic Ware’s advice is to place the pan as close to the centre of the oven as possible and turn it 180 degrees halfway through. To find the hot spots, lay out slices of bread, a dusting of sugar or a tray of cookies and see which areas brown first.
Spread the food evenly across the sheet
A lopsided load bends a pan in 2 ways. The heavy side presses down while the metal is soft with heat, and the bare side heats faster than the side under food, because food carries moisture and mass. Nordic Ware names both as causes of warping. Spread vegetables or cookies across the whole sheet, rather than crowding one end.
The Amazon Basics silicone baking mat rates 4.7 across 123,843 ratings. Owners say it holds up in convection ovens, saves scrubbing and extends the life of their cookie sheets, and that food lifts off without sticking. It protects the surface; it does not stop a thin pan from bending.

Owners say it saves scrubbing and spares their sheets. It cannot flatten a warped pan.

Don't buy it if
- A pan that already rocks, which a mat cannot flatten
A mild warp can be pressed flat once the pan is cool
The test is simple: set the cooled pan on a counter and see whether it rocks, or watch for oil pooling in one corner. Nordic Ware’s fix for a mild warp is to place the cold pan on a flat surface and press on the highest point of the bend. For a worse warp, it cites America’s Test Kitchen’s method of warming the pan for a few minutes and reshaping it. A pan that rocks badly, has deep bends or has warped several times is unlikely to recover.
Heavier aluminum with a reinforced rim stays flat
Nordic Ware’s buying advice is heavier aluminum or steel, a rolled or reinforced rim, a flat solid base, and an oven rating of 450°F or more. The Nordic Ware Naturals half sheet has galvanized steel rims sealed into the aluminum edge for exactly this reason, and rates 4.7 across 35,122 ratings. Owners say it holds up under high heat for cookies and roasts. Some report it discolours in the dishwasher.
