Canvas is sold by mesh: the number of threads per inch, which sets how many stitches per inch you will work.

Lower numbers are faster and coarser. 18-mesh takes roughly 3 times as many stitches to cover the same area as 10-mesh, which is the difference between a weekend and a month.
For a first canvas, 13 is the count to start on. It is fine enough to look like something and coarse enough to finish.
Mono, interlock and penelope
Mono canvas has single threads crossing over and under, and it is the standard for 13 and 18 mesh alike. It is slightly unstable — the threads can shift — which is why mono work is usually stretched on a frame.
Interlock twists the threads at each crossing so they cannot move. It holds its shape in the hand, which makes it the more forgiving choice for a beginner, and it is less pleasant to stitch through.
Penelope is double-threaded, so a single mesh can be split to work fine detail in one area of an otherwise coarse canvas. It is a specialist’s canvas rather than a first one.
Painted beats printed, and it is the price difference
A hand-painted canvas has the design applied so that each of the 13 or 18 intersections per inch carries the colour it should be stitched. You stitch what you see, and the result is what was designed.
A printed canvas has the design pressed onto the surface, which means the colour lands between the holes as often as on them. You are interpreting rather than following, and edges drift.
Almost every kit at kit prices is printed. That is not a scandal — it is the format — but it explains why the finished piece rarely matches the photograph as closely as the maker expected.
