The short answer: about 2 quarts per person, up to 9

Size by the people you feed on a normal night, not by the holiday crowd. As a rule of thumb, 4 quarts serves 1 or 2, 6 quarts serves 2 to 4, and 8 to 9 quarts serves a family of 4 or more. Food crisps when air reaches every side, so a basket filled in one layer beats a bigger pile.
