How to Clean a Burr Coffee Grinder, Step by Step
Coffee is roughly 15% oil by weight, and the oil that stays in the burr chamber goes rancid in about a week. That is the usual reason a grinder that worked in March tastes wrong in April.

Why a grinder tastes stale before the beans do
Roasted coffee is roughly 15% oil by weight, and grinding smears that oil across every surface the grounds touch. The oil is what carries most of the aroma, and it oxidises within about a week at room temperature.
A chamber holding a fortnight of accumulated oil is seasoning every fresh dose with rancid fat. Fresh beans through a dirty grinder taste like old beans, which is why people replace the coffee before they clean the machine.
Grounds retention is the second problem. A conical burr set holds several grams between doses, and yesterday’s stale retained dose comes out mixed into today’s.
Step 1: Unplug it, and empty the hopper
Unplug the grinder at the wall before anything comes apart. A 200 W burr motor has enough torque to injure a finger, and the switch is not a safety device.
Empty the hopper of beans and set them aside in a sealed jar. Beans left in a hopper during cleaning collect dust and go back in oily.
Step 2: Weekly, brush the chamber
Lift off the hopper and take a stiff dry brush to the burr chamber and the exit chute. A natural bristle brush works and so does a clean dry toothbrush.
The chute is where the oil sits thickest, because ground coffee is warm when it passes through and the oil is at its most mobile. Brush downward through it rather than across.
This takes about 4 minutes and it is the step that does most of the work. Everything below is maintenance; this is hygiene.

Step 3: Never put water in the burr chamber
Water and coffee oil make a paste that sets in the burr teeth within 1 drying cycle. It rusts a steel burr set, and on a conical grinder the chamber sits directly above the motor bearing, which was never designed to be wetted.
The hopper and the grounds bin are the exceptions. Both are usually removable plastic and both can be washed in warm soapy water, dried completely, and put back. Check the manual before either goes in a dishwasher.
Everything downstream of the hopper gets a dry brush and nothing else.
Step 4: Every 3 months, strip the burrs
Remove the upper burr according to the manual, which on most conical grinders means turning it to a release position and lifting. Photograph the position of the adjustment collar first, because reassembling it one notch out changes every grind setting on the dial.
Brush both burr faces, working out from the centre along the teeth rather than across them. Use a vacuum or compressed air on the lower burr, which usually stays fixed in the body.
Then reassemble to the same collar position and grind 20 g of beans through it. That first dose picks up brush dust, and it is a dose to discard.
Step 5: What to use instead of rice
Rice appears in a great deal of grinder advice, and several manufacturers void the warranty over it. Uncooked rice is harder than coffee and can chip a burr edge or jam a motor sized for beans.
If a chemical clean is wanted, use purpose-made grinder cleaning tablets, which are a soft food-safe pellet that abrades oil without loading the burrs. They are not a substitute for step 4; they are what you run between strips.
For most home grinders the brush is enough. The tablet is worth it on a machine that grinds oily dark roasts daily.

Weekly for the brush and the chute, at 2 or more doses a day. This is the schedule that keeps the oil ahead of you.
Every 3 months, or 15 kg of beans for the full strip in step 4, whichever arrives first. Dark oily roasts push that toward 2 months.
Never for water in the chamber, at any interval.
The signs you left it too long
Grind output slowing at the same setting means the chute is partly blocked with packed oil and fines. A grinder that used to clear a dose in 12 seconds and now takes 20 is telling you this.
A sour or ashy note in coffee that used to taste clean is the rancid-oil signal, and it appears before any visible buildup. Clean before you change beans, because otherwise you will blame the roaster.
