The fridge takes 1 day for every 4 to 5 pounds

Refrigerator thawing is the USDA’s first method: allow about 24 hours for each 4 to 5 pounds, in a fridge at 40°F or below. A fridge set at 35°F thaws more slowly than one at 40°F, so a cold fridge needs the longer end of each range. Put the bird in a pan or container so the juices cannot drip onto other food.

Turkey weight In the fridge In cold water
4 to 12 lb 1 to 3 days 2 to 6 hours
12 to 16 lb 3 to 4 days 6 to 8 hours
16 to 20 lb 4 to 5 days 8 to 10 hours
20 to 24 lb 5 to 6 days 10 to 12 hours

A turkey thawed in the fridge keeps for 1 or 2 more days before cooking, per the USDA. It can even go back in the freezer uncooked, at some cost to quality. That slack is why the fridge is the safest plan.

Thanksgiving start dates, counted back from 26 November

The last safe day to move a frozen turkey to the fridge follows from the table. For a Thursday 26 November dinner, a 20 to 24 lb bird goes in by Friday 20 November. A 16 to 20 lb bird goes in by Saturday 21 November, and a 12 to 16 lb bird by Sunday 22 November. Starting a day early costs nothing, because the thawed bird keeps for 1 or 2 days.

Cold water is faster, at 30 minutes a pound

Cold-water thawing takes about 30 minutes per pound, so 6 to 8 hours for a 12 to 16 lb turkey. The USDA’s rules are strict. The bird stays in a leak-proof wrapper, sinks fully in cold tap water, and gets fresh water every 30 minutes. It must be cooked as soon as it has thawed, with no day in the fridge afterwards. A sink needs to be big enough to cover the whole bird.

The counter is never safe, even overnight

Thawing on the kitchen counter, in the garage, on the porch or in a car is unsafe, according to the USDA. The outside of the turkey warms into the danger zone of 40 to 140°F, where bacteria multiply fast, while the centre stays frozen.

A frozen turkey can go straight in the oven

Cooking from frozen is safe, per the USDA, and takes about 50% longer than a thawed bird. It is the fallback when the calendar has slipped, not the plan for a 22-pound centrepiece.

Check the thawed bird with a thermometer, in 3 places

A once-frozen turkey is done at the same 165°F as a fresh one, read in the innermost thigh, the innermost wing and the thickest part of the breast. What temperature is turkey done has the full method and roasting times. An instant-read thermometer makes the 3 checks quick, and the 2 below lead instant-read meat thermometers compared.

A roasting pan catches the drips, then roasts the bird
