Oven Mitt Heat Ratings: What 500°F Actually Means
A mitt rated to 500°F will not melt at 500°F. That is a different promise from keeping your hand comfortable while you lift a turkey, and a damp mitt breaks it.

A 500°F rating is what the material survives
Silicone oven gloves can withstand about 260°C, or 500°F, and that is the kind of figure printed on a box. It tells you the glove will not melt or scorch at that temperature. It does not tell you how many seconds of contact your hand inside will tolerate, and that second number is the one that matters when the pan is heavy.
So read a rating as a floor for the material, then judge comfort on 3 other things: the thickness of the wall, the lining against the skin, and whether the mitt is dry.
A damp mitt burns, because water carries heat 24 times better
A quilted mitt is a layer of insulation inside cotton, and the insulation works by trapping still air. Still air conducts about 0.025 watts per metre-kelvin, which makes it a poor carrier of heat.
That is why a cotton mitt used to wipe a counter is the one that scalds on the next lift. Wikipedia’s entry on the oven glove notes that newer fabric mitts are often treated with silnylon, which makes them resist water and stains.
Silicone is waterproof but conducts more heat
Silicone does not soak up water, so it does not fail the way wet cotton does. It does conduct heat more readily than a less dense fibre potholder, so a thin silicone wall with no lining warms through on a long hold.
